Ice Wines

Extremely concentrated dessert wines made from hand picked fully ripened grapes that are left to freeze on the vine. The grapes are then pressed while still frozen which results in a very sweet, concentrated style of juice. Low yields and reliability of weather result in limited availability. Extremely well made right here in British Columbia as well as in Ontario.

Port Wine

One of lifes great pleasures. A wine of immense character, fortified by the addition of brandies to the fermenting grapes. The result is a rich, creamy, sweet wine with a firm finish. There are two main styles of Port, one being aged in the bottle and the other aged in wood casks. Port aged in wood casks tend to take on a "Tawny" colour and are thus named. The aging can be anywhere from 6 to upwords of 50 years and the port is usually sold as a 10, 20 or more year port. Tawny port has a noticeable nutty character along with a more mellow finish. Bottle aged port's such as Vintage port are generally bottled only in the best years and are of top quality. Aged for only 2 to 3 years in wood and then left to mature in the bottle for 10, 20, or more years, Vintage port will have a heavier, spicy feel to it.
